Cooking for Diabetics
Diabetic Chicken Pasta
Doing it the Italian way
2 Chicken Breast Fillets (cubes)1 pkt Pasta (tubes) cooked
4 rashers low fat bacon diced_Spring Onion
1 Large bottle of low fat cream
Garlic Granule (you choose the amount)
7 Mushrooms sliced_2 eggs (whisked with a fork)
Cook pasta
In a frypan spray with canola spray and brown chicken. Add garlic while chicken is browning.
Add bacon and cook for 2 mins then add sliced mushrooms for about 2 mins.
Add pasta and diced spring onions.
Stir in low fat cream and let simmer for 10 mins.
Add some more spring onion.
Turn off and stir through whisked eggs and let stand for 5 minutes.
